Make Your Own Burritos
Seriously, what else comes together faster on a weeknight than burritos? This is a great go-to when you’re short on time or you want to assign a babysitter to dinner. Let your kids build their own so you’ve got complete buy in!

Ingredients
- 2 cups cooked brown or white rice (or frozen)
- 1 15 oz can black beans
- large flour or corn tortillas
- Optional ingredients:
- shredded lettuce
- shredded cheese
- salsa (pico de gallo, tomatillo)
- cooked chicken, steak, or shrimp
Preparation
Cook the rice according to the instructions on the bag. (This is when I really dig the Organic Frozen Rice- it takes 2 minutes in the microwave!) Drain the beans and heat in a small saucepan over low heat. Prep any of the other ingredients you need to add to the burritos.
Heat a large frying pan over medium heat. When it is hot, add a tortilla to the dry pan and warm it on both sides until it’s a little cooked but still pliable, about 1 minute per side. Take it out of the pan, fill with warmed beans and rice, then add any other fillings you’d like. Roll up the tortilla, bending one of the short sides in before rolling to make sure the ingredients don’t fall out! Place seam side down on a plate to help it keep its shape. Repeat with the other tortillas. Serve immediately.
